Peanut butter cookie recipe from BHG cookbook?

can anyone give me the PB cookie recipe from the Better Home and Garden cookbook??? in the 75th Anniversary addition it's on Page 218.......that page is missing from my book, it's my favorite PB cookie recipe and I guess I made them so much, I lost that particular page......PLEASE HELP!!!Peanut butter cookie recipe from BHG cookbook?

I have two peanut butter cookie recipes from older BH%26amp;G cookbooks. Neither one calls for baking powder though. They both call for baking soda.





The newer one is from the 1981 edition. It's close to the one on their website, but not exact.





Here's that one:





1-1/4 cups all-purpose flour


3/4 tsp. baking soda


1/4 tsp. salt


1/2 cup butter or margarine


1/2 cup peanut butter


1/2 cup granulated sugar


1/2 cup packed brown sugar


1 egg


1/2 tsp. vanilla





Stir together flour, soda, and salt. In a mixer bowl beat butter for 30 seconds. Add peanut butter and sugars;beat till fluffy. Add egg and vanilla; beat well. Add dry ingredients to beaten mixture; beat till well combined. Shape dough into 1-inch balls, roll in granulated sugar if desired. Place 2 inches apart on an ungreased cookie sheet; criss cross with the tines of a fork. Bake in a 350 oven about 10 minutes. Cool about 1 mmiunute before removing to a wire rack. Makes 48.





The other one is titled ';Peanut Butter Crisscrosses'; and came from a BH%26amp;G cookbook I received in 1964, so it's definitely the oldest, and I think the best. In fact, they're my favorite cookies in the whole world!





1 cup shortening


1 cup granulated sugar


1 cup brown sugar


2 eggs


1 teaspoon vanilla


1 cup peanut butter


3 cups sifted all-purpose flour*


2 teaspoons soda


1/2 teaspoon salt





Thoroughly cream shortening, sugars, eggs and vanilla. Stir in peanut butter. Sift dry ingredients; stir into creamed mixture.





Drop by rounded teaspoons on ungreased cooky sheet. (Yes, it's spelled ';cooky'; not ';cookie';.) Press with back of floured fork to make crisscross.





Bake in moderate oven (350) about 10 minutes. Makes about 5 dozen cookies.


*For richer cookies, use 2 cups flour.





The biggest difference is one uses butter or margarine and the other uses shortening. I always make mine with Crisco shortening. The texture is a LOT better than if I use butter or margarine!

makes about 36 cookies





1 1/4 cups all-purpose flour





1/3 cup Dutch-process cocoa powder (do not use natural; I find the taste too light. I prefer Scharffen Berger or Valrhona)





1/2 teaspoon baking soda





1 stick plus 3 tablespoons butter, room temperature





2/3 cup light brown sugar





1/4 cup sugar





1/2 teaspoon fleur de sel





1 teaspoon vanilla extract





5 ounces bittersweet chocolate, chopped into little bits (I will admit I have used Nestle Toll House Mini Morsels before because they are nearly the perfect size; very tiny for this cookie is best. However, Greenspan does recommend chopping up your favorite chocolate for best results. If you see the mini morsels in the store, check them out for their size!)





Sift the flour, cocoa, and baking soda together in a bowl. Beat the butter in a mixer until it is soft and creamy. Add in the sugars, salt, and vanilla extract and beat for a few more minutes to combine. Add in the flour and combine on low speed just until the flour is combined. This is probably the trickiest part because the texture of the cookie depends on as little mixing as possible. The dough will be very crumbly; resist the urge to keep mixing until it all comes together because then the cookies will be too tough when baked. Add in the chocolate bits and mix just to distribute them.





Best Chocolate Chip Cookies





INGREDIENTS:


1 cup butter, softened


1 cup white sugar


1 cup packed brown sugar


2 eggs


2 teaspoons vanilla extract


3 cups all-purpose flour 1 teaspoon baking soda


2 teaspoons hot water


1/2 teaspoon salt


2 cups semisweet chocolate


chips


1 cup chopped walnuts





DIRECTIONS:


1. Preheat oven to 350 degrees F (175 degrees C).


2. Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans.


3. Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.





Easy Sugar Cookies





INGREDIENTS:

Raspberry Coconut Cookies

3 1/4 cups flour


1 teaspoon salt


1 teaspoon baking soda


1/2 cup butter


1/2 cup shortening


1 cup brown sugar


3/4 cup granulated sugar


2 eggs


1/2 cup water


1 teaspoon almond extract


2 cups flaked coconut


raspberry jam





Combine flour, soda and salt, stir well to blend.


In another bowl, cream butter, shortening, sugars and eggs


thoroughly.


Add water and almond extract, mix well.


Mix in flour mixture.


Stir in coconut.


Shape into balls, place 2'; apart on a ungreased cookie sheet Make an indentation in each cookieFill with raspberry


jam.


Bake@ 400 for 10 to 12 mins.


Yield 50 to 54 cookies.
CAKE MIX COOKIES


(These cookies I make at Christmas and add to my homemade gift..presents)





White Cake Mix


2 Tablespoons water


2 eggs


1/2 cup cooking oil


1 teaspoon almond extract


1/2 cup chopped nuts


powdered sugar





Mix all ingredients, except powdered sugar.





Drop batter (about a teaspoon per cookie) into a bowl of powdered sugar.





Roll in sugar until it is an approximate shape of a ball.





Place ion a lightly greased cookie sheet.





Bake at 350 degrees about 18 minutes, until lightly browned.





Cool on wire racks. Makes about 4 dozen cookies.





(Use any flavoring or cake mix you desire.)











No-Bake Peanut Butter Squares





Ingredients::


1/2cup (1 stick) butter or margarine


2 cups (sifted) powdered sugar


1 1/2 cups graham cracker crumbs


1 cup peanut butter


1 1/2 Pkg. (12 squares) Semi-Sweet Baking Chocolate


½ cup milk (optional)





Directions:


Line 13” x 9” baking pan with foil, with ends of foil extending over sides of pan. Set aside.


Melt butter in large microwavable bowl on HIGH 1.5 ½- 2½ minutes or until melted.


ADD sugar, graham cracker crumbs %26amp; peanut butter……and milk if needed. Mix well spread into prepared pan.


Microwave chocolate 1.5 – 2 minutes or until meltedm stirring after each minute. Cool slightly; pour %26amp; spread over peanut butter mixture in pan. Cool. Cut partially through dessert to mark 48 squares. Refrigerate 1 hour or until set.


LIFT from pan, using foil handles. Cut all the way through dessert into squares.





(I used the milk…was easier to spread in pan….I’ve made this also…not bothering to line pan with foil…or not scoring before refrigerating…….served from pan…..let it sit at room temperature before cutting…about 15 – 20 minutes..…easier to cut into serving pieces).
Sugar Cookies


Preheat oven to 350 F


1 C veg. oil


1 C butter (you can use margarine but real butter is better)


1 C sugar


1 C powdered sugar


cream oil, butter, and sugars together. Add:


1 t salt


1 t baking soda


1 t cream of tarter


1 t vanilla extract (or almond or lemon depending on taste)


2 eggs


mix well. Add:


4 C flour one cup at a time stirring after each addition


Drop by rounded spoonfuls onto UNgreased cookie sheet and flatten slightly with bottom of glass dipped in sugar. Might take a little trial and error to perfect this. Bake at 350 for about 9 to 11 minutes. Frost with powdered sugar frosting if desired. These are insanely bad for you but they fall apart in your mouth!


Powdered Sugar Frosting:


4 C powdered sugar


1 C butter


1 t vanilla extract


Cream together butter and powdered sugar, add vanilla. May have to add a few drops milk to attain spreading consistency. (Can also add food coloring, if desired)
chewy chocolate chip cookies





2 sticks unsalted butter


2 1/4 cups bread flour


1 teaspoon kosher salt


1 teaspoon baking soda


1/4 cup sugar


1 1/4 cups brown sugar


1 egg


1 egg yolk


2 tablespoons milk


1 1/2 teaspoons vanilla extract


2 cups semisweet chocolate chips





heat oven to 375degrees F.


melt the butter in a heavy-bottom medium sausepan over low heat. sift together the four,salt, and baking soda and set aside. pour the melted butter in the mixer's work bowl. Add the sugar and brown sugar. Cream the butter and sugarson medium speed. Add the egg,yolk,2 tablespoons milk and vanilla extract and mix well until combined. Stir in the chocolate chips. Chill the dough, then scoop onto parchment-lined baking sheets, 6 cookies per sheet. Bake for 14 min. or until golden brown.

Chocolate Caramel Shortbread - I have a queue at the kitchen door every time I make it.





Make a basic shortbread - enough to cover two 12'; x 8'; baking sheets - bake and leave to cool - how much depends on whether you like a thick base I like mine thin and this is the quantity I use





8oz butter


4oz fine vanilla sugar (caster)


If you don't have vanilla sugar you can use ordinary sugar and vanilla or leave the vanilla out altogether


6oz plain flour





Caramel





1 tin condensed milk


8oz unsalted butter


6oz sugar - any will do but I like to use a soft brown


1 tbsp golden syrup





gently melt all the ingredients in a heavy bottom saucepan, bring to the boil and simmer - very important that you stir all the time it usually takes about 20 minutes to get the caramel colour and right consistency - if you drop a small amount onto an ice cold saucer and it sets immediately it is done.





spread over the shortbread and leave to cool





a very large bar of chocolate ( usually milk but I occasionally use dark chocolate) melt the chocolate and spread over the caramel -- I usually do this when the caramel is still warm but not really hot.

They are really easy to make, and come out really beautifully. A word of warning though - they are very rich, so I'd suggest making them about half the size she says to! Everyone loves these cookies!
Go to the supermarket and look for 'chips ahoy chewy', they are the best, but if you insist on making them yourself then just look at the recipe on the back and make them

This is off allrecipes, but because I can't get hold of vanilla instant pudding here I just used butterscotch - they were still fantastic, and kept really well as well.     If you are wanting them soft there is a trick I know. As soon as you take them out of the oven put them in the freezer. When they are cold remove them and take them off of the cookie sheet.     You can use the same recipe you usually use just replace some of the brown sugar with more white sugar. Its the molasses in the brown sugar that makes them chewy. Careful not to over cook them or they will end up crunchy.

    if you have a regular recipe with sugar in it, you can actually replace the sugar with splenda. They have splenda for baking in the baking/sugar section of grocery stores and they should list the conversion for sugar to splenda replacement.

    Sadly, most of the wheat flour substitutes(rice flour, etc) are probably not something you are going to have on hand.





    One thing you could try - is if you have a box of unsalted crackers is to grind those up into the finest powder you can in the food processor and use that. It won't be the same, and the texture will be off - but I'd be interested in seeing how they would do!

    Sparkled ginger cookies





    4 Tbsp sugar


    2 c flour


    1 tsp baking soda


    1/4 tsp salt


    2 1/2 tsp ground ginger


    1/2 tsp cinnamon


    1/2 tsp ground cloves


    1/2 c canola oil


    1/4 c molasses


    1/4 c soy milk (vanilla or regular work great)


    1 c sugar


    1 tsp vanilla extract





    Preheat oven to 350. Lightly grease cookie sheet. Place the 4 tbsp sugar in a small bowl. Sift together flour, soda, salt, and spices. In a separate bowl, combine oil, molasses, soy milk, remaining 1 c sugar and vanilla. Pour dry mix into wet and mix well. Roll into 1'; balls and flatten into a 1 1/2'; disk. Press tops into bowl of sugar and place 1 inch apart, sugar side up on cookie sheet. Bake 10-12 minutes. Let cool on your cookie sheet about 5 minutes before transferring to cooling rack.

    2 c flour


    1 1/3 c rolled oats


    1 tsp baking soda

    2 tbsp molasses


    1 c canned pumpkin


    1 tsp vanilla extract


    1 c walnuts chopped


    1/2 c raisins





    Preheat oven to 350. Lightly grease 2 cookie sheets. Mix flour, oats, soda, salt and spices. In a separate bowl, mix sugar, oil, molasses, pumpkin and vanilla until very well combined. Add dry ingredients to wet, folding to combine. Fold in walnuts and raisins. Drop by tbsp onto cookie sheets 1'; apart. Flatten the tops with your fingers and press into cookie shape. Bake 16 minutes at 350. if you are using 2 sheets at two different layers in the oven, rotate them halfway through cooking. You'll have enough batter for 4 sheets. Remove from oven. wait 2 minutes before transferring to cooling rack. allow time to cool and set.

    I looked up recipes for you, but you're extremely limited in the ingredients you have. You need to go to the store, stock up on some ingredients, and then ask this question. I would have plenty of recipes for you then.

    You do need to go shopping. But I can make one suggestion:





    If you have it, try replacing half the flour in whatever recipe you use with oat bran. I do that when I make brownies, and they're tasty!
    How the hell are you going to make cookies without milk, eggs or butter or their vegan equivalents?





    That's like saying, hey, I want a recipe for steak, but it can't have any meat in it because I'm vegan and I don't have any processed soy meat products in the fridge right now.

    Seven Layer Magic Bars





    Makes about 36


    1/2 cup butter or margarine


    1 1/2 cups graham cracker crumbs


    1 14-oz. can sweetened condensed milk


    1 cup butterscotch flavored chips


    1 cup semi-sweet chocolate chips


    1 1/3 cups flaked coconut


    1 cup chopped pecans





    Preheat oven to 350掳, (325掳 for glass dish). Line a 13x9-inch baking pan with a sheet of foil, making sure to cover the sites well. Place the butter in the baking pan and melt it in the oven.     I normally am a plain chocolate chip lover, but these were great! They also have an extremely long name. :)





    WHITE CHOCOLATE CRANBERRY-ORANGE OATMEAL COOKIES





    1. 1 cup butter, softened


    2. 1 1/2 cups sugar


    3. 2 eggs


    4. 1 teaspoon vanilla extract

    1 cup Crisco shortening (butter or regular)


    2 cups sugar

    1/2 cup water with 1 level teaspoon of baking soda added

    Mix all ingredients together like pie dough. On well floured surface roll out dough. It will be a little sticky, but once you have the flour on the dough it will roll out easily.     Do you have any Crisco? A lot of oatmeal cookies use shortening instead of butter or margarine. My recipe from my sister-in-law uses Crisco and is yummy - my brother says his wife's oatmeal cookies are the best he's ever had, so now I use her recipe!





    You might even find a recipe for ';salad'; oil meaning vegetable, corn or canola but I'd stay away from olive oil in cookies and cakes due to the taste change. If you check some of the other sites for recipes, you might even find one with applesauce.

    Preheat oven to 350 degrees F (177 degrees C) and place rack in center of oven. Line a baking sheet with parchment paper.





    In the bowl of your electric mixer (or with a hand mixer), cream the butter and sugar until light and fluffy (2-3 minutes). Add the egg yolk and vanilla extract and beat until combined.





    In a separate bowl, whisk together the flour and salt. Add the flour mixture to the batter and beat just until combined. If the batter is too soft to roll into balls, refrigerate for about 30 minutes.





    In a small bowl, whisk the egg white until frothy. Place the chopped nuts on a plate. Roll the dough into 1 inch (2.54 cm) balls. Taking one ball of dough at a time, dip first into the egg white and then lightly roll in the nuts. Place on the prepared baking sheet spacing about 1 inch (2.54 cm) apart. Using your thumb or end of a wooden spoon, make a indentation into the center of each cookie and fill with about 1/4 - 1/2 teaspoon of jam.





    Bake for about 13-15 minutes, or until cookies are set and the nuts have nicely browned. Remove from oven and place on wire rack to cool.





    Note: To toast the nuts. Spread nuts on a baking sheet and bake in a 350 degree F (180 degree C) oven for 8-10 minutes (almonds, pecans and walnuts). The nuts are done when they are light golden-brown in color and fragrant. Toast the hazelnuts for about 15 minutes or until fragrant and the outer skins begin to flake. Remove from oven and place the hot nuts in a dish towel. Roll up the towel and let the nuts sit (steam) for a few minutes then rub the nuts in the towel briskly to remove the skins. Let cool completely. Once the nuts have cooled, place them in your food processor and process until finely chopped. Alternatively, you could chop them by hand.





    Note: If you are planning to store these cookies, you can bake them without the jam. Just reduce the baking time by a few minutes. These cookies can be stored for about a week. Fill the cookies will jam the same day as serving.

    There is no such thing as a BAD chocolate chip cookie recipe. Try to find one, I dare you.





    As for the brown sugar, if you have molasses (light or dark), add 1 tablespoon to your mix. That is what a lot of the less expensive brown is, anyway...





    You can make your cookies with just white sugar, they will be a bit blander tasting. If you have any instant coffee, put 1/2 tsp into your cookies, and they will have a bit more flavor.





    Soft and chewy will depend on you. Use milk instead of water, whip the eggs before adding, reduce the butter/shortening by 1-2 Tbsp, and don't overbake. The grease and baking time are what make them chewy.

    1/2 cup butter


    3 ounces unsweetened baking chocolate


    1 1/4 cups sugar


    1 teaspoon vanilla


    1 teaspoon spicy or dark rum

    I Package of Betty Crocker Sugar Cookie Mix


    1/2 Cup of Butter


    1 Egg


    Cinnamon (Amount optional)


    1.Preheat Oven to 350 Degrees F


    2. Mix Cookie Mix, butter, and egg. Mix well until dough-like. With floured hands, make a ball out of the dough. Place in Seran Wrap, and refrigerate for an hour. After an hour, take out and split dough in half. Roll out into a 5' by 5' square, and sprinkle cinnamon on it. Rub cinnamon in the dough, until smooth. Roll into log, and place aside. Do the same with the other half.


    3. Refrigerate Logs for 20 minutes. Take out, and cut into inch long bite sized cookie dough pieces. Place on greased cookie pan. Mix 1 Tablespoon of Cinnamon and 1 Teaspoon of Sugar, and sprinkle on the insides of the cookie. Bake for 10 minutes, or until bottom is golden brown. It's ok if it's soft, because it will harden while cooling.

    Ingredients

    Roll into balls; roll in mix of 2 tbsp sugar + 2 tsp cinnamon

    Ingredients


    鈥?4 sticks margarine, softened


    鈥?2 录 cups sugar


    鈥?4 eggs


    鈥?录 cup milk


    鈥?2 tsp almond extract


    鈥?2 tsp vanilla


    鈥?2 tsp baking powder


    鈥?7 录 cups flour


    鈥?1 tsp salt


    鈥?1/8 tsp cardamom





    Cream the margarine and sugar together until it appears airy and lighter in color. Add one egg at a time, then the milk, almond extract, and vanilla extract. Scrape the sides well and mix again.


    In a large measuring cup, measure out 4 cups of flour and add the baking powder, salt, and cardamom. Mix and fluff up the dry ingredients with a fork. Add in small increments to the wet ingredients, mixing just until combined in between. Add the remaining flour in the same manner until the dough is not sticky to the touch (you may need to add more flour than the recipe calls for).


    Turn dough out onto clean surface and divide into 4-6 equal sized batches. Wrap in plastic wrap or foil and refrigerate at least 4 hours.


    Roll out, cut out, and decorate as desired. Bake at 350 degrees for 10-12 minutes.

    ORIGINAL GIRL SCOUT COOKIES





    2 sticks butter, softened and cut into chunks


    1 cup sugar


    2 large eggs, room temperature


    2 tablespoons milk


    1 teaspoon vanilla extract


    2-1/2 cups all purpose flour


    2 teaspoons baking powder


    Sugar for sprinkling (opt)





    In a mixing bowl (by hand if you want to be authentic), cream butter and sugar. Add eggs, one at a time, beating well after each addition Add milk and vanilla and beat until light and fluffy. Combine flour and baking powder and gradually add this to creamed mixture. Now you鈥檒l have to chill this before rolling out (normally you can roll most cookies out between two pieces of clear wrap or two permanent baking mats like I鈥檓 using which are available at The Great Indoors and which eliminate any greasing of cookie sheets, and then refrigerate them before cutting out, but this dough is simply too soft to do that) and that will take anywhere from 2 to 24 hours. Roll out on a lightly floured surface about 1/4'; thick. Cut and place on ungreased cookie sheet. Sprinkle with sugar if you like. Bake in preheated 350 degree oven for 8-10 minutes (8 for a softer cookie; 10 for a more crisp cookie). Cool on wire racks. Makes about 4 dozen 2-1/2'; cookies.






    Chocolate Pudding Cookies


    2 1/4 cups all-purpose flour


    1 teaspoon baking soda


    1 cup butter, softened


    3/4 cup packed light brown sugar


    1/4 cup white sugar


    1 (3.4 ounce) package instant butterscotch pudding mix


    1 teaspoon vanilla extract


    2 eggs


    12 ounces semisweet chocolate chips





    Preheat oven to 375*. Combine the flour and soda and set aside. Mix the butter, sugars, pudding mix and vanilla. Beat until creamy. Add in the eggs and mix well. Gradually stir in the flour. Stir in the chocolate chips and drop by teaspoonfuls onto ungreased cookie sheets. Bake for 8-10 minutes.








    Peanut Butter Chocolate Chip





    1/2 cup unsalted butter, softened


    1 1/2 cups dark brown sugar


    1/2 cup white sugar


    1/2 teaspoon salt


    2/3 cup peanut butter


    2 eggs


    1 1/2 teaspoons vanilla extract


    2 1/2 cups all-purpose flour


    2 teaspoons baking soda


    2 cups semisweet chocolate chips





    Preheat oven to 350* In large bowl, cream together butter, sugars, salt and peanut butter. Beat in eggs and vanilla and then add the flour and soda. Mix well and then add chips. Roll balls of dough and drop onto greased cookie sheet 2'; apart. Flatten a bit with the bottom of a glass. Bake 10 - 12 minutes and then let cool.






    Cake mix cookies IV- Allrecipes.com- these are the greatest cookies ever, you can make about 4 dozen(1 cake mix) in about 20 minutes, and that includes the baking time. I recommend pulling them from the oven after they have raised a little bit and the top starts to look wrinkled. Let them set on the cookie sheet for about 4 minutes then transfer to a wire rack and cool completely. Store in an airtight container and they are just yummy and easy. Use funfetti mix for a party cookie.

    My Big, Fat Chocolate Chip Cookies





    2 1/2 cups all-purpose flour


    1 teaspoon baking soda


    1 teaspoon salt


    1 cup (2 sticks) unsalted butter, at room temperature


    1/2 cup white sugar


    3/4 cup packed light brown sugar


    1 teaspoon pure vanilla extract


    2 large eggs


    1 (8-ounce) block dark chocolate, coarsely chopped


    Preheat the oven to 350 degrees F.


    Line 2 cookie sheets with parchment paper. Sift together the flour, baking soda, and salt into a medium bowl and set aside.


    Place the butter, sugar, and brown sugar in the bowl of an electric mixer; cream together on medium speed until light and fluffy. Scrape down the sides of the bowl with a rubber spatula. Beat in the vanilla and eggs. Gradually add the dry ingredients to the creamed mixture and continue to mix until a smooth batter forms. Turn off the mixer and fold in the chocolate chunks using the spatula.


    To form the cookies, scoop about 1/4 cup of cookie dough into your hands and roll it around into a ball; place them about 3-inches apart onto the prepared cookie sheets; you should get about 4 cookies on each pan.     OREO PIZZA





    30 OREO, divided


    1 pkg fudgy brownie mix


    1/2 cup vegetable oil


    1/4 cup water


    2 eggs


    1 1/2 cup mini marshmallows


    1/3 cup m%26amp; m





    Pre heat oven to 350


    Put 22 cookies in bag and crush


    Cut remaining cookies in to small pieces


    Prepare brownie mix using oil, water, and eggs


    Stir in crushed cookies





    Pour into sprayed pizza pan


    Bake 18- 20 min


    Sprinkle top with marshmallows


    Return to oven 1- 2 min


    Remove pan from oven


    Sprinkle cookie pieces and M%26amp;M over top





    I like to melt a small amount of chcoclate and or vanilla frosting in the microwave.

    make taco pie





    you need one thing of cresent rolls


    a big cantainer of sour cream


    1 lb hamburger


    half a bag of doritos (any flavor) crushed


    and shreded cheese(any flavor)


    1 package of taco seasoning





    dont take apart the cresent rolls, but spread them on a greased cookie sheet according to the package.


    Brown the hamburger (drain) and then add the taco seasoning.


    Once the cresent rolls are finshed put the hamburger on top of it, then the sour cream and then crushed doritos and cheese and put it back in the oven until the cheese is melted.





    Then cut into slices and enjoy!
    Biscuit recipe





    You will need 225 grams butter, 225 grams sugar, 2 eggs, 450 grams of self raising flour, 2 teaspoons of baking powder and some jam.





    Pre heat your oven to 180 degrees C.





    Beat the butter and sugar together. Add the eggs one at a time, beating in well. Add flour and baking powder and mix well.





    Take spoonfuls of the mixture and roll into a ball. Place on a baking tray (greased or lined). Dent centre of dough with a teaspoon and put a dollop of jam in centre.





    Bake for 15 minutes or until golden brown.





    They are truly delicious. My 10 year old daughter makes them all the time. She even mixes up the recipe and leaves out the jam but adds chocolate chips to make choc chip cookies!

    You just can't go wrong with Toll House Choc Chip cookies. The recipe is on the side of the choc chip bag. You can also buy ready to bake ones for faster service.
    CAKE MIX COOKIES


    (I make these at Christmastime for gift giving)





    White Cake Mix


    2 Tablespoons water


    2 eggs


    1/2 cup cooking oil


    1 teaspoon almond extract


    1/2 cup chopped nuts


    powdered sugar





    Mix all ingredients, except powdered sugar.





    Drop batter (about a teaspoon per cookie) into a bowl of powdered sugar.





    Roll in sugar until it is an approximate shape of a ball.





    Place ion a lightly greased cookie sheet.





    Bake at 350 degrees about 18 minutes, until lightly browned.





    Cool on wire racks. Makes about 4 dozen cookies.





    (Use any flavoring or cake mix you desire.)








    Monster Cookies


    (Makes a ‘monster amount)


    I found this recipe…but as yet have not tried it.





    Cream together: *(use a ‘large’ pan for this)


    12 eggs


    1 lb soft butter


    2 lb brown sugar


    4 c. sugar


    1 T vanilla


    ½ tsp salt


    3 lb creamy peanut butter


    Then add:


    18 c. rolled oats


    8 tsp baking soda


    1 lb M%26amp;M’s plain


    1 lb chocolate chips (or butterscotch)


    Spoon out and Bake at 325 til done!








    Ritzy/Chocolate/Peanut Butter Sandwich Cookies





    Ritz crackers


    Creamy peanut butter


    Chocolate chips





    1.) Cover cookie sheet with waxed paper.


    2.) Melt the chocolate chips in the double boiler.


    3.) Spread peanut butter on a Ritz and top with another cracker.


    4.) Dip the sandwich in the melted chocolate use tongs carefully so you don't break the cracker and dip in chocolate…cover completely.


    5.) Place the chocolate-covered sandwich on the cookie sheet…and let chocolate set.


    Store in air tight container in refrigerator.





    I’ve used…graham crackers (break at perforations)….various crackers.





    Hint: Might try vanilla wafers…..and maybe fill with some store bought frostings….. or small amount of jam…..or marshmallow crème.





    No-Bake Peanut Butter Squares





    Ingredients::


    1/2cup (1 stick) butter or margarine


    2 cups (sifted) powdered sugar


    1 1/2 cups graham cracker crumbs


    1 cup peanut butter


    1 1/2 pkg. (12 squares) Semi-Sweet Baking Chocolate


    1/2cup milk (optional)





    Directions:


    Line 13” x 9” baking pan with foil, with ends of foil extending over sides of pan. Set aside.


    Melt butter in large microwavable bowl on HIGH 1.5 - 2½ minutes or until melted.


    ADD sugar, graham cracker crumbs %26amp; peanut butter……and milk if needed. Mix well spread into prepared pan.


    Microwave chocolate 1.5 – 2 minutes or until melted stirring after each minute. Cool slightly; pour %26amp; spread over peanut butter mixture in pan. Cool. Cut partially through dessert to mark 48 squares. Refrigerate 1 hour or until set.


    LIFT from pan, using foil handles. Cut all the way through dessert into squares.





    (I used the milk…was easier to spread in pan….I’ve made this also…not bothering to line pan with foil…or not scoring before refrigerating…….served from pan…..let it sit at room temperature before cutting…about 15 – 20 minutes..…easier to cut into serving pieces).
