Cookie recipe, is baking soda that necessary?

i have all the ingredients to a cookie recipe but 1 tsp baking soda, whats the purpose will it make the cookies taste bad?Cookie recipe, is baking soda that necessary?
substitute baking powder for the baking soda. You will be adding a small amount of an acid (like cream of tarter) but that will have minimal impact. I would make this substitution rather than go without anything.





Contrary to above posters, baking soda does not cause a rise unless there is an acid added (like buttermilk) or cream of tarter. Baking powder does cause a rise but the impact will be minimalCookie recipe, is baking soda that necessary?

Baking is based in science. Things that react together to make your baking rise, come out tender etc. And the amounts of everything to make this happen. Follow the recipe or it won'e work out. Baking isn't forgiving like cooking is.
No, it doesn't make the cookies taste bad!But it's important in most cookies!!!





Mud Cookies - Aka - Chocolate No Bake Cookies:





Ingredients:


2 cups sugar


1/2 cup butter


3 tablespoons cocoa


1/2 cup evaporated milk or milk (I use evaporated milk)


1 teaspoon vanilla


1/2 cup peanut butter (I use crunchy PB)


3 cups oatmeal (I prefer old fashioned oats, not quick cooking)





Directions:


1.Combine butter, cocoa, sugar, and milk in a large saucepan.





2.Bring to a full boil, reduce heat and simmer for one minute stirring constantly.





3.Add vanilla and peanut butter mixing well.





4.Stir in oats.





5.Quickly drop onto waxed paper by the spoonful or desired amount.





6.Let cool and enjoy.





7.Do not under or over cook ingredients in saucepan. Once oats are stirred in drop onto wax paper immediately. I do not suggest in double batching this particular recipe.

Prize Nut Cookies (Ice Box Cookies)





Ingredients:


1 cup brown sugar


3 eggs, well beaten


1 cup white sugar


1 teaspoon cinnamon


1 1/2 cups Crisco, melted


1 teaspoon salt


4 1/2 cups flour, sifted twice


1 cup walnuts, chopped





Directions:


1.Cream shortening and sugars.





2.Add eggs and beat well.





3.Add flour, salt, cinnamon and nuts; mix well.





4.Make two rolls (I use wax paper to make the rolls) and refrigerate over night.





5.Cut thin and bake in 350 degree oven until lightly browned.





Enjoy!!!
Yes, they won't rise and there is no substitute.
Baking soda mades the cookies rise. Thats why rise.
your cookies won't rise or be soft.
Normally, you would need a rising agent. Your cookie might turn out flat.
Without it, your cookies will be hard as rocks, you'll break your teeth trying to eat them, but they should taste fine! :)
