im baking cookies and i cant find my flour):

Sadly, most of the wheat flour substitutes(rice flour, etc) are probably not something you are going to have on hand.





One thing you could try - is if you have a box of unsalted crackers is to grind those up into the finest powder you can in the food processor and use that. It won't be the same, and the texture will be off - but I'd be interested in seeing how they would do!
1 cup rice flour


1 cup oat flour


1/2 cup of buckwheat flour





Try this, it will work.
i watched an episode where Giada de Laurentis made chocolate cookies out of polenta.

If you have plain corn meal that will work.


Oatmeal will work too just use an extra egg.
Paula Deen just yesterday made peanut butter cookies with no flour!
You could grind oats or cornmeal so its fine enough. Or just do a flour-less recipes.
