HERE鈥橲 WHAT REALLY HITS THE SPOT





1 cup packed dark brown sugar


3/4 cup sugar


1 cup butter, softened


1 teaspoon pure vanilla extract


1/2 cup healthy egg substitute, or 2 eggs


2 1/2 cups flour


3/4 teaspoon baking soda


3/4 teaspoon salt


2 cups semisweet chocolate chips


Heat oven to 350F degrees.





Beat sugars and butter in large bowl with mixer on medium speed until fluffy, about 3-5 minutes. Beat in vanilla and eggs. Stir in flour, baking soda and salt. Stir in chocolate chips. Using a 1 inch scooper, dole out dough on cookie sheet about 2 inches apart on ungreased cookie sheet.





Bake 11-13 minutes to until edges are light brown (middle will be soft). Quickly remove from cookie sheet to wire rack. Store in an airtight container to keep fresh and soft.

CHOCOLATE CHIP COOKIES OR BARS





1 c. butter


1/2 c. sugar


1/2 c. brown sugar


2 eggs


1 tsp. baking soda


1 tsp. salt


1 tsp. vanilla


2 c. flour


1 or 2 c. chocolate chips


Nuts (opt.)





Cream together first 7 ingredients. Add remaining ingredients. Drop by spoonfuls on greased cookie sheet or spread in cake pan for bars. Bake at 350 to 375 degrees for 12 to 15 minutes.

















Basic Chocolate Chip Cookie (from food network website)





1/2 cup (1 stick) unsalted butter


3/4 cup packed dark brown sugar


3/4 cup sugar


2 large eggs


1 teaspoon pure vanilla extract


1 (12-ounce) bag semisweet chocolate chips, or chunks


2 1/4 cups all-purpose flour


3/4 teaspoon baking soda


1 teaspoon fine salt





Evenly position 2 racks in the middle of the oven and preheat to 375 degrees F. (on convection setting if you have it.) Line 2 baking sheets with parchment paper or silicone sheets. (If you only have 1 baking sheet, let it cool completely between batches.)





Put the butter in a microwave safe bowl, cover and microwave on medium power until melted. (Alternatively melt in a small saucepan.) Cool slightly. Whisk the sugars, eggs, butter and vanilla in a large bowl until smooth.





Whisk the flour, baking soda and salt in another bowl. Stir the dry ingredients into the wet ingredients with a wooden spoon; take care not to over mix. Stir in the chocolate chips or chunks.





Scoop heaping tablespoons of the dough onto the prepared pans. Wet hands slightly and roll the dough into balls. Space the cookies about 2-inches apart on the pans. Bake, until golden, but still soft in the center, 12 to 16 minutes, depending on how chewy or crunchy you like your cookies. Transfer hot cookies with a spatula to a rack to cool. Serve.





Store cookies in a tightly sealed container for up to 5 days.





For a Rocky Road Bar:





Lightly butter a 9 by 13-inch baking pan. Make the batter as per cookie recipe and fold in 1 cup chopped walnuts along with the chocolate chips. Spread batter in prepared pan. Bake until the edges are light brown and the batter sets, about 45 minutes. Cool slightly and cover surface with 4 cups marshmallows and 1 cup chocolate chips. Broil at least 8 inches from the heat until marshmallows turn golden brown, about 2 minutes. (Keep an eye on the marshmallows, and turn the pan frequently--they go from golden to char in a wink.) Cool, cut and serve.
This is a fantastic recipe for chocolate chip cookies. The cornstarch makes them so chewy--delicious! And they are so easy to make. Enjoy! :)

1 cup chocolate chips (I prefer milk chocolate chips, but semi-sweet are also great with this recipe)


3/4 cup unsalted butter, at room temp


1 cup brown sugar


1/4 granulated sugar


1 egg


2 tsp vanilla





1. Preheat oven to 350F.


2. In a medium bowl, using a fork, stir together flour, cornstarch, baking soda and salt until evenly mixed.


3. Place butter in large bowl. Using a wooden spoon, beat until smooth, about 1 min. Then beat in both sugars until fluffy.


4. Beat in egg and vanilla.


5. Using a spoon, stir in flour mixture and chocolate chips until evenly mixed.


6. Scoop out about 1 tsp dough and place on cookie sheet. Repeat with rest of dough, leaving about 2 inces between each cookie.


7. Bake for 8-10 mins.


8. Remove from oven, transfer on wire rack.

* 150g softened butter


* 1/2 cup caster sugar


* 1/2 cup brown sugar


* 1 tsp vanilla extract


* 1 egg


* 1 3/4 cups plain flour


* 1 cup milk chocolate bits





Method





1. Preheat oven to 160掳C. Line 2 baking trays with non-stick paper. Beat 150g softened butter, 1/2 cup caster sugar, 1/2 cup brown sugar and 1 tsp vanilla extract for 1-2 minutes or until smooth and well combined. Beat in 1 egg.


2. Stir in 1 3/4 cups plain flour in two batches. Stir in 1/2 cup dark choc bits and 1/2 cup milk choc bits until evenly distributed. Spoon tablespoonfuls of the mixture into balls and place on the lined trays. Press down slightly.


3. Bake for 15-18 minutes or until light golden and cooked. Transfer to a wire rack to cool. Store in an airtight container for up to 1 week.
