Have you ever heard of a cookie recipe you can make in a frying pan?

I sure have. They are good too. Well my husband likes them. Coconut is not my favorite.

Fry Pan Cookies

1 1/2 cups chopped dates

2 eggs

1 cup sugar

1/4 cup butter

1 teaspoon vanilla

1/4 teaspoon salt

3 cups rice Krispies

1/2 cup chopped nuts

chopped coconut

Combine first 6 ingredients in a frying pan over low heat. Cook for 10 minutes, stirring constantly. Cool, add 3 cups of rice krispies or a similar cereal, and 1/2 cup chopped nuts. Mix the cereal into the date mixture well. Form into balls and roll each ball in chopped coconut.

There is another one called ';scottish scones' I recently found the recipe on Heritage Recipes.com. A friend's mom made them when we were kids, took forever to find the recipe, but they are wonderful! Report Abuse
