PUMPKIN CHOCOLATE CHIP COOKIES





1 c. pumpkin


3/4 c. sugar


1/2 c. oil


1 egg


2 c. flour


2 tsp. baking powder


1 tsp. cinnamon


1/2 tsp. salt


1 tsp. baking soda


1 tsp. milk


1 c. chocolate chips


1 tsp. vanilla


Nuts (optional)





Dissolve baking soda in milk; set aside. In large bowl add pumpkin, sugar, oil, and egg; stir. Add flour, baking powder, cinnamon, salt and baking soda mixture. Mix well. Stir in chocolate chips and vanilla. Spoon onto cookie sheet. Bake at 375 degrees 10 to 12 minutes or until done.Any good cookie recipes?
Here is a halloween treat. Ghoast cookies that you can make :





You will need:





1 package (18 ounces) refrigerated cookie dough, any flavor


1 cup vanilla frosting


3/4 cup marshmallow creme


32 chocolate chips


Candy for decoration (optional)





Preheat oven to 350F. Using 1 tablespoon dough for body and 1 tablespoon for head, form dough into ghost shapes on greased cookie sheet. Bake 10 minutes or until browned. Cool.





While cookies are baking, combine frosting and marshmallow creme in a small bowl until blended.





Frost each ghost with frosting mixture. Press 2 chocolate chips, points up, into frosting to create eyes on each ghost. Makes 16 cookies
Double Chocolate Mint Cookies





2 1/2 cups butter, softened


4 cups white sugar


4 eggs


1 teaspoon vanilla extract


1 teaspoon peppermint extract


4 cups all-purpose flour


1 1/2 cups unsweetened cocoa powder


2 teaspoons baking soda


1 teaspoon salt


2 cups semisweet chocolate chips








Directions





Preheat oven to 350 degrees F (175 degrees C).





Cream together, butter, sugar and eggs. Mix in remaining ingredients. Blend well.





Drop by teaspoonful onto a cookie sheet. Bake at 350 degrees F (175 degrees C) for 8-9 minutes. Cookies will be soft. Cool about 1 minute on cookie sheet then remove to a wire rack to cool completely.

Chocolate Peanut Butter Chip Cookies








1 cup butter


1 1/2 cups white sugar


2 eggs


2 teaspoons vanilla extract


2 cups all-purpose flour


2/3 cup unsweetened cocoa powder


3/4 teaspoon baking soda


1/2 teaspoon salt


2 cups peanut butter chips





Directions





Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.





In a medium bowl, cream together the butter and sugar. Stir in the eggs and vanilla. Combine the flour, cocoa, baking soda and salt, stir into the creamed mixture. Finally, fold in the peanut butter chips. Drop cookies by heaping teaspoonfuls onto the prepared cookie sheets.





Bake for 8 to 10 minutes in the preheated oven, until set. Cool on wire racks.

Chocolate Covered Cherry Cookies





1/2 cup butter


1 egg


1 1/2 cups all-purpose flour


1/4 teaspoon salt


1/4 teaspoon baking soda


1/4 teaspoon baking powder


1 cup white sugar


1/2 cup unsweetened cocoa powder


1 1/2 teaspoons vanilla extract


1/2 cup sweetened condensed milk


1 cup semisweet chocolate chips


1 (10 ounce) jar maraschino cherries





Directions





Preheat oven to 350 degrees F (180 degrees C).





Beat butter and sugar. Add egg and vanilla and beat well. Add dry ingredients and stir until smooth.





Roll into 1-inch balls about the size of a walnut (larger if desired). Place on ungreased cookie sheet.


Drain cherries and reserve juice. Press center of each ball with thumb. Place a cherry in indentation.





In a saucepan, heat condensed milk and chocolate chips until chips are melted. Stir in 4 teaspoons of cherry juice. Spoon about 1 teaspoon of mixture over each cherry and spread to cover cherry. (More cherry juice may be added to keep frosting of spreading consistency.)





Bake for 10 minutes.
