i do not have any shortening and would like to make sugar cookies w/ my toddler for halloween. The recipe calls for 2/3 C of shortening, can I replace that w/ butter and if so how much?Can I replace shortening w/ butter for a sugar cookie recipe?
My recipe is
2 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 cup butter, softened
1 1/2 cups white sugar
1 egg
1 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 190 degrees C
In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.
I ALWAYS USE BUTTER and I always use this recipe they come out fine.

You can use butter instead. The rule of thumb is 1 to 1, meaning use the same amount of butter as you would shortening. I usually add a little more of the butter. For your recipe it would be about 2 tablespoons more.

1 stick = 8 tbls. or 1/2 cup
1/3 cup = 5 tbls.
2/3 cup = 10 tbls.
Looks like you would need 1 stick + 2 tbls.
You can always do that - shortening is only a cheaper and slightly healthier substitute. In any recipe just use butter if you have it, always in the same amount. Butter is much more tasty!
