I am trying to eat healthy and reduce my sugar and fat intake... but would like to bake some healthier biscuits? Can't resist a cup of tea and a biscuit....Any ideas?Low fat biscuit / cookie recipes?
Low-Fat Vegan Cookie Dough
Ingredients
3 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
2/3 cup maple syrup
1/3 cup applesauce
1/2 cup brown sugar
4 tablespoons soymilk
Directions
1Mix 2 1/2 cups of the flour in a bowl with the baking soda, baking powder, and the salt. Mix the maple syrup, applesauce, brown sugar, and soymilk in another bowl, Stir the flour mixture into the mixed wet ingredients. Continue to add flour 1/4 cup at a time until dough is no longer sticky. Knead dough by hand adding a couple of tablespoons of flour at a time if dough becomes sticky.
2Dough can now be rolled and shaped as per need.
3Typical baking time is 10 minutes in a 325F oven.
4This recipe is the best effort to date of trying to find a workable low fat alternative to high fat pastry type cookie dough. Corn syrup will work in place of the maple syrup. Increasing the baking soda lightens the cookie, while decreasing it produces a chewier cookie. Sugar can be adjusted up or down as desired.Low fat biscuit / cookie recipes?
This recipe for chocolate chip cookies was inspired by Alton Brown's chewy chocolate chip cookies recipe (he's got a show called Good Eats).
REDUCED FAT AND SUGAR
Chocolate Chip Cookies
1/2 C canola oil
1 C dark brown sugar
2 eggs
2 Tablespoons milk
1 1/2 teaspoons vanilla
1 1/4 C chocolate chips
2 1/4 C bread flour
1 teaspoon salt
1 teaspoon baking soda
Sift together flour, salt and soda. Set aside. In mixing bowl, blend the eggs, oil, milk, and vanilla. Add sugar and blend thoroughly, scraping bowl. Slowly add the flour mixture. Mix thoroughly. Stir in chocolate chips. Refrigerate at least 2 hours. Line a cookie sheet with parchment paper and scoop out cookie dough in rounded tablespoonfuls. Bake in a 350 degree oven for 10 - 12 minutes. Cool on wire rack.

1 Cup persimmon pulp (do not sieve)
1 Teaspoon baking soda
2 egg whites
1/2 Cup applesauce
1 Cup currants
1/4 Cup chopped almonds (optional)
Combine dry ingredients except baking soda. Add baking soda to
persimmon pulp and beat in egg whites. Add dry ingredients to
persimmon pulp, stir in applesauce currants, and almonds. Make
drop cookies. Place on a cookie sheet sprayed with a nonstick
product. Bake at 375 degrees for 15 to 20 minutes.

1 c Flour; unbleached, sifted
2 ts Cinnamon
1/2 ts Nutmeg

1/4 ts Ground cloves
1/2 ts Baking soda

1/4 c Margarine; softened
1/4 c Promise ultra fat free

1 c Brown sugar; packed
1 Egg white; whipped
1 ts Vanilla
1/2 c Sour cream, fat-free
Preheat oven at 350. Prepare baking sheets with cooking spray. In a mixing bowl, combine flours, cinnamon, nutmeg, ginger, cloves, baking soda,and salt. In another mixing bowl, combine margarine, spread, brown sugar,egg white, vanilla, and sour cream. Add dry ingredients with wet ingredients just until moistened. Cover and chill overnight. On a heavily floured surface (dough will be slightly sticky that's why more flour is needed), roll dough 1/8″ thickness. Using a 2 1/2 '; cutters, cut dough into desired shapes. Arrange 1″ apart on prepared baking sheet. Bake for 15 minutes and lightly browned. If desired, decorate cookies with Powdered Sugar Icing.

Preheat oven to 350~f; grease cookie sheet with margarine; cream oil with sugars; add egg white, vanilla and water, mixing well; add oats,flours, salt, baking soda and cinnamon, mixing only until blended; DO NOT OVER MIX or you will lose the texture of the oats; drop batter by teaspoonfuls onto cookie sheet and bake for 10 - 15minutes. Makes 3 dozen cookies.- Per Serving: Calories 62, Fat 3 g, Sodium 27 mg, Cholesterol 0 mg.

GARLIC CHEESE BISCUITS (LIGHT)

2 c Minus 1 T flour
1 tb Plus 2 tsp baking powder
1/2 ts Baking soda
1 Pinch salt
3 tb Stick margarine, chilled
3/4 c Low fat (1.5%) buttermilk
1 1/2 oz Sharp cheddar cheese, grated
1/4 ts Garlic powder
1. Preheat oven to 450F. Line baking sheet with
parchment or waxed paper; spray with nonstick cooking
spray.
2. In a medium bowl, sift together the flour, baking
powder, soda and salt. Add 2 tablespoons of the
margarine and blend with pastry cutter until mixture
resembles coarse crumbs. Add buttermilk and cheese;
combine with fork, handling dough as little as
possible. Drop by spoonfuls onto prepared baking
sheet; bake until lightly browned, about 8-10 minutes.
3. While biscuits are baking, in a small microwavable
bowl, add remaining tablespoon margarine; microwave on
high until margarine is melted. Stir in garlic powder;
set aside.
4. When biscuits are done, remove from oven and brush
margarine mixture evenly over the warm biscuits.
Remove from baking sheet and serve immediately.
